Slow Cooker Whole Chicken

Ingredients
  

  • 1 whole organic chicken
  • 2 yellow onions, quartered
  • 1.5 teaspoons paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper

Instructions
 

  • Quarter the two onions, pull the pieces apart, and lay them at the bottom of the slow cooker to create a base for the chicken rest on.
  • Remove any organs and rinse off the whole chicken. Pat it dry with a paper towel.
  • Combine all the seasonings above to make a dry rub. Season the inside cavity of the chicken as well as the entire outside. *Make sure to see my tip above about seasoning the breasts.
  • Place the chicken breast side down on top of the onions in the slow cooker. There is no liquid needed because the chicken will cook down in its own juices.
  • Put the lid on the slow cooker and cook the chicken on low for 7-8 hours.
  • Once the chicken is done, remove it from slow cooker and pull all the meat off the bones to enjoy as is, or use the meat in another recipe.
