Gluten-Free Peanut Butter Cup Cookies

Ingredients
  

  • 1/2 cup salted butter, softened
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup organic creamy peanut butter
  • 2 eggs
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 2 1/2 cups gluten-free baking flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions
 

  • Preheat the oven to 375 degrees F.
  • In a large bowl, cream together the butter, sugars, and peanut butter with an electric mixer.
  • Add in the eggs, water, and vanilla. Mix well.
  • In a separate bowl, mix together the flour, baking soda and salt.
  • Add the dry ingredients to the wet ingredients and stir until a dough is formed.
  • Place parchment paper on a baking sheet and roll two-inch cookie balls. Place them about three inches apart on the baking sheet. 
  • Bake for 12-15 minutes or until the edges are golden brown. 
  • While the cookies are baking, cut the Unreal Peanut Butter Cups into fourths.
  • Take the cookies out of the oven and gently press a quartered peanut butter cup into the center.
  • The peanut butter cup will begin to melt and that is okay.
  • Serve the cookies with a glass of almond milk or your drink of choice. Enjoy!
