Cream of Chicken Soup (Gluten Free & Dairy Free)

Ingredients
  

  • 1 1/2 cup chicken broth
  • 1 1/2 cup almond milk
  • 4 tablespoons butter, salted
  • 6 tablespoons gluten-free baking flour
  • 1 1/2 teaspoon onion powder
  • 1 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 pound cooked chicken breast, shredded or cubed

Instructions
 

  • In a saucepan over medium heat, melt the butter.
  • Add in the onion powder, salt, pepper and flour and mix well for just about 15 seconds. It will thicken quickly.
  • Add in the chicken broth and mix well. Add in the almond milk and stir again, whisking until everything is combined.
  • Continue stirring over medium heat for 5-8 minutes, or until the soup thickens.
  • Add in the cooked chicken and mix well.
  • Store the soup in a glass mason jar in the refrigerator to use in your favorite recipe.
