Ingredients
  

  • 1 1/4 cup gluten-free baking flour
  • 1 1/4 teaspoons baking powder
  • 1 scoop Prime Vanilla Protein Powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/3 cup unsweetened coconut milk
  • 1/2 cup maple syrup
  • 1/2 cup vanilla coconut yogurt
  • 2 teaspoons vanilla extract
  • 1/4 cup naturally colored/flavored sprinkles

Instructions
 

  • Preheat the oven to 350 degrees F.
  • In a bowl, mix together the flour, baking powder, protein powder, and salt.
  • In another bowl, beat the eggs and then add in the maple syrup, yogurt, milk, and vanilla extract.
  • Fold in the sprinkles and mix well.
  • Fill the mini muffin pan and bake for 10-12 minutes, or until a toothpick inserted comes out clean.
  • Remove from the muffin pan and enjoy!
  • *Note: Allow to completely cool before storing in the refrigerator or freezer.
